I love to cook. I love to bake even more. I have a lot of great recipes and I'm always experimenting with new ones. Here, I'll share some of my family's favorites.



Breakfast


Berry Pancake Cups

You need:

3 cups of complete pancake Mix
1 - 1 1/2 cups of water
2 tablespoons of sugar
1/2 cup of blackberries
1/2 cup of blueberries

Combine the pancake mix, 1 cup of water, sugar, and blackberries. Mix well until the blackberries have broken up. Add the blueberries and mix just until blended. If the mix is too thick, add the additional 1/2 cup of water. Fill muffin cups 2/3 full and bake at 400 for 20 minutes. Yields 1 dozen.



Main Courses


Easy Cheesey Casserole

You need:

  • 1 lb of ground beef or turkey
  • 1 can of corn
  • 1 package of garlic flavored instant potatoes
  • Cheese of your choice
  • Salt, pepper and granulated garlic
Season ground beef/turkey with salt, pepper and garlic to taste and brown. Drain the can of corn and add to the beef/turkey. Let that simmer while you prepare the potatoes according to the directions on the package. You may need to  add a little more liquid to the potatoes because you need them loose. Drain the beef/turkey mixture and pour into a casserole dish. Spread the potatoes over the top of the beef/turkey and corn mixture. Top the potatoes with your choice of cheese and bake at 350 until cheese is melted. Enjoy!


Side Dishes



Zucchini Fritters

2 cups grated zucchini
1/2 cup of flour
1 egg
1 tablespoon sugar
salt
pepper

Combine the above ingredients and mix well. In a frying pan, melt a few tablespoons of butter. When the pa is hot and the butter is melted, drop zucchini mixture by large tablespoonfuls into pan. They will spread a little. Fry until golden brown on both sides. Enjoy!
