Is it a pancake or a muffin?

Well, it's both. Recently my kids wanted pancakes for breakfast but my pan was unavailable. So, I got the bright idea for pancake muffins. It's very easy and they came out super yummy. I used 3 cups of complete pancake mix, 1 cup of water, 1/2 cup of blackberries, 1/2 cup of blueberries and 2 tablespoons of sugar. I mixed everything but the blueberries together really well so that the blackberries broke into pieces. Once that was well mixed, I added the blueberries and mixed just until combined. I poured them into muffin cups and baked them at 400 for 20 minutes. At first my kids were a bit hesitant and a little puzzled. But once they tried them they wouldn't stop eating them! They were very soft and tasted great. A bonus to making them this way is that there's no need for syrup so there's less sugar and less mess! I'm going to experiment with other flavors and varieties and I'll let you know how those go. I've included a pic but it's a crappy cell phone picture so please excuse the quality.
